Botanist opened in the spring of 2017 with tidy creative plates of new Pacific Northwest cuisine that highlight ingredients like morels, sidestripe shrimp, smoked egg yolk, compressed melon and wagyu beef. Apart from a botany-inspired dining room, there is a leafy champagne lounge and a glass-walled terrace garden with edible species. The cocktail lab produces whimsical designer cocktails.
